Amaryllidaceae) are mai multe denumiri populare: ai s\u00e2rbesc, ajim\u0103, ceap\u0103 alb\u0103, ceap\u0103 bl\u00e2nd\u0103, coada vacii, hagim\u0103, hajme, horceag, por, poroi, poroaic\u0103, poriu, praj, pur.<br \/>\nPrazul este o plant\u0103 erbacee, bienal\u0103, leguminoas\u0103, originar\u0103 din zonele vecine M\u0103rii Mediterane (Egipt, Grecia, Asia Mic\u0103).<br \/>\nLocuitorii Romei antice aveau un adev\u0103rat cult pentru praz, gra\u021bie \u00eemp\u0103ratului Nero, supranumit \u201eprazofagul\u201c care aprecia  aceast\u0103 legum\u0103.<br \/>\nAllium porrum s-a folosit ca plant\u0103 de leac de mii de ani, este semnalat \u00een hieroglife, \u00een papirusurile egiptene, \u00een care se poveste\u0219te c\u0103 un medic al vremii l-a sc\u0103pat de o infec\u021bie urinar\u0103 pe  faraonul Keops, folosind  100 de leg\u0103turi de praz. Hipocrate l-a studiat \u00eendelung \u0219i a descoperit numeroase din calit\u0103\u021bile sale, iar multe dintre acestea au fost confirmate \u00een zilele noastre de c\u0103tre oamenii de \u0219tiin\u021b\u0103.<br \/>\nPrazul este simbolul na\u021bional al \u021b\u0103rii Galilor iar  Fran\u021ba este cea mai mare produc\u0103toare de praz din Europa.<br \/>\nCompozi\u021bia chimic\u0103 a prazului este divers\u00e3: ap\u0103 87-90%, glucide 6 g\/100 g, fibre 3,5 g\/100 g, hidra\u021bi de carbon, proteine 2 g\/100 g, lipide 0,3 g\/100 g, pectine, substan\u021be minerale, dintre care: potasiu 300 mg\/100 g, calciu 63 mg\/100 g, fier, magneziu, fosfor, ulei volatil, vitaminele: A, B1, B2, niacin, C (300 mg\/100 g), E, PP, caroten 2 mg\/100 g, fier 1 mg\/100 g, fitoncide.<br \/>\nAc\u021biunea farmacologic\u0103 a plantei Allium porrum  este de tonic al sistemului nervos, laxativ, diuretic cu eliminare de acid uric, antiseptic, expectorant, emolient, antihelmitic,stimuleaz\u0103 func\u021bionarea sistemului digestiv, este stimulent al \u00eentregului organism.<br \/>\nFrunzele de praz con\u021bin  pectin\u0103, ceea ce-l face s\u00e3 fie hr\u00e3nitor, iar ca \u0219i con\u021binut caloric este neglijabil, deci se poate utiliza \u00een cazul curelor de sl\u0103bire. Tot \u00een frunza de praz se \u00eent\u00e2lnesc  cantit\u0103\u021bi minime de siliciu, care pot fi absorbite cu  u\u0219urin\u021b\u0103 diminea\u021ba,siliciul s-a dovedit a fi un important du\u0219man al colesterolului ac\u021bion\u00e2nd at\u00e2t asupra producerii sale c\u00e2t \u0219i asupra descompunerii acestuia \u00een colin\u0103 \u0219i sterol.<br \/>\nFibrele solubile din praz \u00eencetinesc absorb\u021bia zah\u0103rului \u00een s\u00e2nge, poate fi consumat  de cei care au diabet \u0219i  \u00eei ajut\u0103  la diminuarea efectelor acestei afec\u0163iuni stimul\u00e2nd activitatea pancreasului. Riscul de diabet zaharat insulino-dependent este de circa 3 ori mai sc\u0103zut la consumatorii permanen\u021bi de ceap\u0103 \u0219i praz.<br \/>\nPrazul poate fi consumat \u0219i sub form\u0103 de supe fiind util \u00een afec\u021biunile cardiovasculare deoarece are proprietatea de a elimina  gr\u0103simile \u0219i zah\u0103rul  din organism.<br \/>\nProprietatea de bun diuretic se datoreaz\u00e3 con\u021binutului \u00een fructozani \u0219i \u00een potasiu (300 mg\/100 g).<br \/>\nAllium porrum este  bogat \u00een caroteni, vitamina C \u0219i E, combina\u021bie care stimuleaz\u0103  imunitatea.<br \/>\nPe de alt\u00e3 parte frunza verde de praz are un bogat con\u021binut \u00een radicali liberi care faciliteaz\u0103 absorb\u021bia unor aminoacizi esen\u021biali din proteinele animale iar un consum crescut de frunze verzi de praz timp de 100 de zile, cre\u0219te eficacitatea metabolismului proteic hepatic cu 60-70%. Proteinele sunt cele mai importante substan\u021be din organism, substan\u021bele din frunza de praz au puterea de a reechilibra func\u021biile biologice prin antrenarea produc\u021biei de biocatalizatori (enzime, hormoni proteici,celule ale ap\u0103r\u0103rii imunitare).
